Ingredients:

  • 1.5 lbs boneless skinless chicken thighs
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper or foil.
  2. Vigorously pat the chicken thighs dry on all sides with paper towels to ensure a proper sear.
  3. Place chicken in a large bowl, drizzle with 2 tablespoons of olive oil, and toss until thoroughly coated.
  4. In a small bowl, whisk together the salt, pepper, garlic powder, onion powder, oregano, and smoked paprika.
  5. Sprinkle the seasoning mixture over the chicken and massage into the meat with your hands for even distribution.
  6. Arrange the thighs flat on the baking sheet, smooth-side up, ensuring at least one inch of space between each piece.
  7. Bake for 18–22 minutes until the internal temperature reaches 165°F and the edges are slightly charred.
