- 1.5 lbs boneless skinless chicken thighs
- 2 tbsp extra virgin olive oil
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
Instructions:
- Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper or foil.
- Vigorously pat the chicken thighs dry on all sides with paper towels to ensure a proper sear.
- Place chicken in a large bowl, drizzle with 2 tablespoons of olive oil, and toss until thoroughly coated.
- In a small bowl, whisk together the salt, pepper, garlic powder, onion powder, oregano, and smoked paprika.
- Sprinkle the seasoning mixture over the chicken and massage into the meat with your hands for even distribution.
- Arrange the thighs flat on the baking sheet, smooth-side up, ensuring at least one inch of space between each piece.
- Bake for 18–22 minutes until the internal temperature reaches 165°F and the edges are slightly charred.
