Ingredients:

  • 2 medium sweet potatoes (approx. 1 lb / 450g)
  • 1 tbsp avocado oil
  • 1/2 tsp sea salt

Instructions:

  1. Scrub the potatoes thoroughly under cold water to remove all debris. Pat them completely dry with a paper towel and use a fork or paring knife to prick each potato 5-6 times to allow internal steam to escape.
  2. In a small bowl, toss the potatoes with avocado oil and salt until evenly coated.
  3. Place the potatoes in the air fryer basket, ensuring they aren't touching to allow maximum airflow. Set the temperature to 400°F (200°C) and cook for 40-45 minutes.
  4. Remove the potatoes once a knife slides into the center with zero resistance. Let them rest for 5 minutes before slicing.
