Ingredients:
- 2 medium sweet potatoes (approx. 1 lb / 450g)
- 1 tbsp avocado oil
- 1/2 tsp sea salt
Instructions:
- Scrub the potatoes thoroughly under cold water to remove all debris. Pat them completely dry with a paper towel and use a fork or paring knife to prick each potato 5-6 times to allow internal steam to escape.
- In a small bowl, toss the potatoes with avocado oil and salt until evenly coated.
- Place the potatoes in the air fryer basket, ensuring they aren't touching to allow maximum airflow. Set the temperature to 400°F (200°C) and cook for 40-45 minutes.
- Remove the potatoes once a knife slides into the center with zero resistance. Let them rest for 5 minutes before slicing.
