Ingredients:

  • 1 lb boneless skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp avocado oil
  • 1/4 cup light mayonnaise
  • 2 tbsp Thai sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp soy sauce
  • 1 tsp honey

Instructions:

  1. Pat the chicken cubes completely dry with paper towels to ensure a crispy exterior.
  2. In a large bowl, whisk together the flour, cornstarch, salt, pepper, and garlic powder.
  3. Toss the chicken cubes in the flour mixture until every piece is evenly coated in a thin layer.
  4. Preheat the air fryer to 400°F (200°C).
  5. Arrange the chicken bites in a single layer in the air fryer basket, ensuring they are not touching to allow maximum airflow.
  6. Lightly spray the tops of the chicken with avocado oil.
  7. Cook for 10 minutes, shaking the basket halfway through, until the internal temperature reaches 165°F (74°C).
  8. While the chicken cooks, whisk together the light mayonnaise, Thai sweet chili sauce, sriracha, soy sauce, and honey in a small bowl.
  9. Transfer the hot chicken bites to a clean bowl, pour the sauce over them, and toss gently until well coated.
