Ingredients:

  • 1 medium head cauliflower (approx. 600g), cut into bite-sized florets
  • 1.5 tbsp avocado oil
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 0.5 tsp kosher salt
  • 0.25 tsp cracked black pepper
  • 0.25 cup Buffalo hot sauce
  • 1 tbsp melted unsalted butter

Instructions:

  1. Wash 1 medium head of cauliflower (600g) and cut it into uniform, bite-sized pieces.
  2. Use a clean kitchen towel to pat the cauliflower until it is completely dry to the touch.
  3. Place florets in a large bowl and sprinkle with 1 tbsp cornstarch, 1 tsp garlic powder, 1 tsp smoked paprika, 0.5 tsp onion powder, 0.5 tsp kosher salt, and 0.25 tsp black pepper.
  4. Drizzle 1.5 tbsp avocado oil over the seasoned cauliflower and toss vigorously. Toss until the florets are matte and evenly coated.
  5. Preheat your air fryer to 400°F.
  6. Arrange the cauliflower in a single layer in the air fryer basket, ensuring pieces are not touching. Leave space for the air to whistle between florets.
  7. Cook at 400°F for 10 minutes.
  8. Remove the basket and give it a firm shake to flip the pieces. Return to heat for 5 more minutes until edges are dark and crackling.
  9. In a small bowl, whisk 0.25 cup Buffalo sauce with 1 tbsp melted unsalted butter.
  10. Move the hot cauliflower to a clean bowl, pour the sauce over, and toss quickly. Serve immediately while the coating is at its peak shatter point.
