Ingredients:
- 1 medium head cauliflower (approx. 600g), cut into bite-sized florets
- 1.5 tbsp avocado oil
- 1 tbsp cornstarch
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 0.5 tsp onion powder
- 0.5 tsp kosher salt
- 0.25 tsp cracked black pepper
- 0.25 cup Buffalo hot sauce
- 1 tbsp melted unsalted butter
Instructions:
- Wash 1 medium head of cauliflower (600g) and cut it into uniform, bite-sized pieces.
- Use a clean kitchen towel to pat the cauliflower until it is completely dry to the touch.
- Place florets in a large bowl and sprinkle with 1 tbsp cornstarch, 1 tsp garlic powder, 1 tsp smoked paprika, 0.5 tsp onion powder, 0.5 tsp kosher salt, and 0.25 tsp black pepper.
- Drizzle 1.5 tbsp avocado oil over the seasoned cauliflower and toss vigorously. Toss until the florets are matte and evenly coated.
- Preheat your air fryer to 400°F.
- Arrange the cauliflower in a single layer in the air fryer basket, ensuring pieces are not touching. Leave space for the air to whistle between florets.
- Cook at 400°F for 10 minutes.
- Remove the basket and give it a firm shake to flip the pieces. Return to heat for 5 more minutes until edges are dark and crackling.
- In a small bowl, whisk 0.25 cup Buffalo sauce with 1 tbsp melted unsalted butter.
- Move the hot cauliflower to a clean bowl, pour the sauce over, and toss quickly. Serve immediately while the coating is at its peak shatter point.
