Ingredients:
- 4 cups (600g) Granny Smith apples, peeled and diced small
- 1/3 cup (65g) brown sugar
- 1 tsp (5g) ground cinnamon
- 1 tbsp (15g) cornstarch
- 1/4 cup (60ml) water
- 6 large (approx 10-inch) flour tortillas
- 1/2 cup (115g) unsalted butter, melted
- 2 tbsp (16g) cinnamon sugar mix
- 4 oz (115g) cream cheese, softened
- 1/4 cup (60ml) powdered sugar
- 1/2 tsp (2.5g) vanilla extract
Instructions:
- Sauté the diced apples, brown sugar, cinnamon, cornstarch, and water in a saucepan over medium heat.
- Stir frequently for 8–10 minutes until the apples are tender and the liquid is a, thick glaze.
- Remove the pan from heat and let it cool for a few minutes.
- Whisk the softened cream cheese, powdered sugar, and vanilla until smooth.
- Lay a tortilla flat and spread a thin layer of the cream cheese mixture in the center.
- Top the cheese with a generous scoop of the apple filling.
- Roll the tortillas tightly and place them seam side down in the baking dish.
- Brush the tops liberally with melted butter and sprinkle with cinnamon sugar.
- Bake at 400°F (200°C) for 12–15 minutes until the edges are golden and the tips are crisp.
