Ingredients:

  • 4 cups (600g) Granny Smith apples, peeled and diced small
  • 1/3 cup (65g) brown sugar
  • 1 tsp (5g) ground cinnamon
  • 1 tbsp (15g) cornstarch
  • 1/4 cup (60ml) water
  • 6 large (approx 10-inch) flour tortillas
  • 1/2 cup (115g) unsalted butter, melted
  • 2 tbsp (16g) cinnamon sugar mix
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (60ml) powdered sugar
  • 1/2 tsp (2.5g) vanilla extract

Instructions:

  1. Sauté the diced apples, brown sugar, cinnamon, cornstarch, and water in a saucepan over medium heat.
  2. Stir frequently for 8–10 minutes until the apples are tender and the liquid is a, thick glaze.
  3. Remove the pan from heat and let it cool for a few minutes.
  4. Whisk the softened cream cheese, powdered sugar, and vanilla until smooth.
  5. Lay a tortilla flat and spread a thin layer of the cream cheese mixture in the center.
  6. Top the cheese with a generous scoop of the apple filling.
  7. Roll the tortillas tightly and place them seam side down in the baking dish.
  8. Brush the tops liberally with melted butter and sprinkle with cinnamon sugar.
  9. Bake at 400°F (200°C) for 12–15 minutes until the edges are golden and the tips are crisp.
