Ingredients:
- 6 cups (1.4 kg) peeled and sliced apples (mix of Granny Smith and Honeycrisp)
- 2 tbsp (30ml) lemon juice
- 1 tbsp (12g) ground cinnamon
- 2 tbsp (30ml) maple syrup
- 1 tbsp (8g) cornstarch
- ¼ tsp (1.5g) salt
- 1 cup (90g) old-fashioned rolled oats
- ¾ cup (95g) almond flour
- ½ cup (100g) coconut sugar
- ½ cup (115g) cold unsalted butter, cubed
- 1 tsp (2g) ground cinnamon
- ¼ tsp (1.5g) salt
Instructions:
- Preheat the oven to 375°F (190°C) and lightly grease a 9x9 inch baking dish.
- In a large bowl, toss the sliced apples with lemon juice, 1 tbsp cinnamon, maple syrup, cornstarch, and salt until evenly coated.
- Transfer the apple mixture to the prepared baking dish and spread them evenly.
- In a medium bowl, whisk together the rolled oats, almond flour, coconut sugar, 1 tsp cinnamon, and salt.
- Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or forks, work the butter in until the mixture resembles coarse crumbs with pea-sized lumps.
- Sprinkle the oat crumble evenly over the apples, leaving a small gap at the edges to prevent overflow.
- Bake for 40–45 minutes until the topping is a deep golden brown.
