Ingredients:

  • 2 large English cucumbers, thinly sliced (approx. 1.5 lbs / 680g)
  • ½ medium red onion, thinly sliced (approx. 3 oz / 85g)
  • 1 tsp kosher salt
  • ½ cup apple cider vinegar
  • 3 tbsp granulated sugar
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh dill, chopped

Instructions:

  1. Slice the cucumbers into thin rounds. Place them in a colander and toss with 1 tsp of salt. Let them sit for 20 minutes to draw out excess moisture.
  2. Whisk together the apple cider vinegar, sugar, salt, and pepper in a bowl until the sugar crystals have completely dissolved. Add the sliced red onions to the mixture and let them steep for at least 15 minutes.
  3. Rinse the salted cucumbers quickly under cold water to remove excess surface salt, then pat them dry with a paper towel.
  4. Add the cucumbers and fresh dill to the vinegar-onion mixture. Toss gently until every slice is coated.
  5. Let the salad chill in the fridge for 10-15 minutes before serving.
