Ingredients:

  • 1 cup fresh lemon juice, strained
  • 1/2 cup honey
  • 1/4 cup fresh peppermint leaves, packed
  • 1/4 cup fresh spearmint leaves, packed
  • 2 cups filtered water
  • 1/2 cup Blue Curaçao
  • 1 cup vodka
  • 4 cups crushed ice
  • 6 fresh mint sprigs
  • 6 lemon wheels
  • 6 maraschino cherries

Instructions:

  1. Muddle the peppermint and spearmint leaves with the honey in the bottom of a high-speed blender. Pulse on low for 10 seconds to release the oils without over-processing.
  2. Add the strained lemon juice, filtered water, and vodka to the blender. Blend on high for 30 seconds.
  3. Slowly add the crushed ice while the blender is running, increasing the speed until the mixture reaches a thick, frozen slush consistency.
  4. Pour in the Blue Curaçao and pulse three times to streak the blue color through the mint base.
  5. Pour into chilled glasses and garnish each drink with a mint sprig, a lemon wheel, and a maraschino cherry.
