Ingredients:
- 1 cup (225g) unsalted butter
- 3/4 cup (150g) granulated sugar
- 3/4 cup (165g) packed light brown sugar
- 1/2 cup (120g) pumpkin puree
- 1 large egg
- 1 tbsp (15ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (5g) cream of tartar
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tbsp (8g) pumpkin pie spice
- 1 tsp (2g) ground cinnamon
- 1/4 cup (50g) granulated sugar
- 1 tbsp (8g) ground cinnamon
- 1/2 tsp (1g) pumpkin pie spice
Instructions:
- Place the unsalted butter in a saucepan over medium heat. Melt and continue to cook, whisking constantly, until the butter foams, crackles, and develops mahogany-colored bits at the bottom. Remove from heat immediately and let cool for 10 minutes.
- In a large bowl, cream together the browned butter, granulated sugar, and brown sugar until pale and fluffy.
- Beat in the pumpkin puree, egg, and vanilla extract until the mixture is fully emulsified.
- In a separate bowl, whisk together the all-purpose flour, cream of tartar, baking soda, salt, pumpkin pie spice, and ground cinnamon.
- Gradually fold the dry ingredients into the wet mixture until no flour streaks remain.
- Cover the dough and refrigerate for at least 30 minutes to prevent excessive spreading.
- Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper or silicone mats.
- Combine the additional granulated sugar, cinnamon, and pumpkin pie spice in a small bowl to create the coating.
- Roll the chilled dough into balls, roll each ball in the cinnamon-pumpkin sugar coating, and place on baking sheets.
- Bake for 10 minutes, then transfer to a wire cooling rack.
