Ingredients:
- 1 package (15.25 oz) Yellow Cake Mix
- 1/2 cup (113g) Unsalted Butter, melted and slightly cooled
- 1 Large Egg, room temperature (for crust)
- 8 oz (226g) Full-fat Cream Cheese, softened
- 2 Large Eggs, room temperature (for filling)
- 1 lb (454g) Confectioners' Sugar
- 1 tsp (5ml) Pure Vanilla Extract
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
- In a large bowl, combine the dry cake mix, melted butter, and one egg. Stir until a thick dough forms.
- Press the dough firmly into the bottom of the prepared pan in an even layer to create the crust.
- In a separate bowl, beat the softened cream cheese with a mixer until smooth and aerated, about 2 minutes.
- Add the remaining two eggs and vanilla extract to the cream cheese; beat on medium speed until incorporated.
- Gradually add the confectioners' sugar on low speed, then increase to medium-high and whip for 1-2 minutes until glossy.
- Pour the cream cheese mixture over the unbaked crust and spread to the edges.
- Bake for 40 minutes until the edges are golden and the center is set but slightly jiggly.
