Ingredients:

  • 1 package (15.25 oz) Yellow Cake Mix
  • 1/2 cup (113g) Unsalted Butter, melted and slightly cooled
  • 1 Large Egg, room temperature (for crust)
  • 8 oz (226g) Full-fat Cream Cheese, softened
  • 2 Large Eggs, room temperature (for filling)
  • 1 lb (454g) Confectioners' Sugar
  • 1 tsp (5ml) Pure Vanilla Extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
  2. In a large bowl, combine the dry cake mix, melted butter, and one egg. Stir until a thick dough forms.
  3. Press the dough firmly into the bottom of the prepared pan in an even layer to create the crust.
  4. In a separate bowl, beat the softened cream cheese with a mixer until smooth and aerated, about 2 minutes.
  5. Add the remaining two eggs and vanilla extract to the cream cheese; beat on medium speed until incorporated.
  6. Gradually add the confectioners' sugar on low speed, then increase to medium-high and whip for 1-2 minutes until glossy.
  7. Pour the cream cheese mixture over the unbaked crust and spread to the edges.
  8. Bake for 40 minutes until the edges are golden and the center is set but slightly jiggly.
