Ingredients:
- 2 lbs sweet potatoes, peeled and cubed into 1-inch pieces
- 2 tbsp coconut oil, melted
- 1 tsp fine sea salt
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the cubed sweet potatoes with the melted coconut oil until every surface is glistening.
- Sprinkle the fine sea salt, smoked paprika, garlic powder, and black pepper over the oiled potatoes; toss again until evenly coated.
- Spread the potatoes across the baking sheet in a single layer, ensuring at least a half-inch of space between each piece to prevent steaming.
- Roast for 30–35 minutes, using a spatula to flip the potatoes halfway through (around 17 minutes) to ensure even browning.
