Ingredients:
- 1 cup (245g) pumpkin puree (unsweetened)
- 1/2 cup (120ml) full-fat coconut milk (canned)
- 2 tbsp (16g) cornstarch
- 1/4 cup (60ml) maple syrup
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground ginger
- 1/4 tsp (0.5g) ground cloves
- 1/4 tsp (1.5g) sea salt
- 1 tsp (5ml) vanilla extract
Instructions:
- In a medium saucepan, whisk together the pumpkin puree, coconut milk, and maple syrup until the mixture is a uniform orange hue.
- Sift in the cornstarch, cinnamon, ginger, cloves, and salt. Whisk vigorously while cold to ensure there are no lumps of starch.
- Place the pan over medium heat and stir constantly with a spatula, scraping the bottom and edges to prevent scorching.
- Continue stirring for 5–7 minutes until the pudding thickens and just begins to bubble; remove from heat immediately once it coats the back of a spoon.
- Stir in the vanilla extract.
- Pour the pudding into individual glass jars and press a piece of parchment paper or plastic wrap directly onto the surface to prevent a skin from forming.
- Allow the jars to cool and chill in the refrigerator for 2 hours.
