Ingredients:
- 2 lbs sweet potatoes, peeled and cubed into 1-inch pieces
- 2 tbsp extra virgin olive oil
- 1 tbsp cornstarch
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions:
- Preheat your oven to 425°F (220°C). Peel the sweet potatoes and cut them into uniform 1-inch cubes. Pat the cubes dry with a paper towel to remove excess surface moisture.
- In a large mixing bowl, whisk together the olive oil, cornstarch, garlic powder, smoked paprika, salt, and pepper.
- Toss the sweet potato cubes into the mixture, stirring until every side is evenly coated in the slurry.
- Spread the potatoes on a parchment-lined baking sheet in a single layer with space between them. Bake for 20–25 minutes, flipping halfway through, until the edges are charred and the centers are velvety.
