Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed into 1-inch pieces
  • 2 tbsp extra virgin olive oil
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat your oven to 425°F (220°C). Peel the sweet potatoes and cut them into uniform 1-inch cubes. Pat the cubes dry with a paper towel to remove excess surface moisture.
  2. In a large mixing bowl, whisk together the olive oil, cornstarch, garlic powder, smoked paprika, salt, and pepper.
  3. Toss the sweet potato cubes into the mixture, stirring until every side is evenly coated in the slurry.
  4. Spread the potatoes on a parchment-lined baking sheet in a single layer with space between them. Bake for 20–25 minutes, flipping halfway through, until the edges are charred and the centers are velvety.
