Ingredients:

  • 1 lb (450g) Fresh Strawberries
  • 8 oz (225g) High-Quality Dark Chocolate (60% to 72% cocoa)
  • 1 tsp Refined Coconut Oil
  • 1 pinch Flaky Sea Salt

Instructions:

  1. Wash strawberries under cold water. Dry them individually with a paper towel and let them air-sit for 20 minutes to ensure they are bone-dry.
  2. Add 3/4 of the chopped chocolate and the coconut oil to a microwave safe bowl. Heat for 30 seconds, then stir thoroughly with a dry spatula.
  3. Continue heating in 15 second bursts, stirring between each, until the chocolate is silky and only a few tiny lumps remain.
  4. Remove from the heat and keep stirring until the residual heat melts those last lumps. This prevents the chocolate from graining.
  5. Line a tray with parchment paper. Hold each strawberry by its green leaves, dip into the chocolate, and place on the tray. Sprinkle with a pinch of flaky sea salt.
  6. Allow the berries to set in a cool area for 30 minutes until the shell is firm and snapping.
