- 1.5 cups (180g) gingersnap cookie crumbs
- 4 tbsp (55g) unsalted butter, melted
- 1 tbsp (8g) granulated sugar
- 24 oz (680g) cream cheese, softened to room temperature
- 1 cup (200g) granulated sugar
- 3 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 0.5 cup (120g) sour cream, room temperature
- 0.5 cup (120g) pumpkin puree
- 1 tsp (2g) pumpkin pie spice
- 0.25 tsp (1g) ground cinnamon
Instructions:
- Preheat your oven to 325°F (160°C).
- Combine gingersnap crumbs, melted butter, and sugar in a bowl until the mixture feels like wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust for 8-10 minutes until nutty and toasted, then set aside to cool.
- Beat the softened cream cheese and sugar on medium-low speed until smooth and creamy.
- Add eggs one at a time, mixing just until combined.
- Stir in the vanilla extract and sour cream using a rubber spatula until the batter is a uniform ivory color.
- Pour exactly half of the plain batter over the cooled crust and smooth the top.
- In the remaining half of the batter, gently fold in the pumpkin puree, pumpkin pie spice, and cinnamon until the color is a consistent deep orange.
- Carefully pour the pumpkin mixture over the plain layer and smooth the edges with a spatula.
- Bake for 30-40 minutes.
- Allow the cheesecake to cool and then chill in the refrigerator for at least 4 hours before serving.
