Ingredients:

  • 1 lb refrigerated pizza dough
  • 1 tsp extra virgin olive oil
  • 1/2 tsp garlic powder
  • 6 large eggs
  • 1 tbsp skim milk
  • 1 cup lean turkey sausage crumbles
  • 1/2 cup sliced bell peppers and scallions
  • 1 1/4 cups part-skim shredded mozzarella cheese
  • 4 oz light cream cheese
  • 1 tsp dried chives
  • 1/2 tsp cracked black pepper

Instructions:

  1. Preheat oven to 425°F (220°C). Stretch the pizza dough across a lightly greased baking sheet. Brush edges with olive oil and sprinkle with garlic powder. Bake for 5-7 minutes until the surface is matte and slightly puffed.
  2. While the crust par-bakes, brown the turkey sausage in a non-stick skillet over medium heat until fully cooked. Remove sausage from the pan.
  3. Wipe the skillet and add eggs whisked with skim milk. Scramble until they are just set but still look moist (shiny). Remove from heat immediately to prevent overcooking.
  4. In a small bowl, combine softened light cream cheese, dried chives, and black pepper. Spread this mixture evenly over the par-baked crust.
  5. Top the cream cheese layer with the soft-scrambled eggs, turkey sausage, bell peppers, and scallions. Sprinkle the shredded mozzarella over the top.
  6. Return the pizza to the oven and bake for an additional 10-12 minutes until the cheese is melted and bubbly and the crust is golden brown.
