Ingredients:
- 1 lb refrigerated pizza dough
- 1 tsp extra virgin olive oil
- 1/2 tsp garlic powder
- 6 large eggs
- 1 tbsp skim milk
- 1 cup lean turkey sausage crumbles
- 1/2 cup sliced bell peppers and scallions
- 1 1/4 cups part-skim shredded mozzarella cheese
- 4 oz light cream cheese
- 1 tsp dried chives
- 1/2 tsp cracked black pepper
Instructions:
- Preheat oven to 425°F (220°C). Stretch the pizza dough across a lightly greased baking sheet. Brush edges with olive oil and sprinkle with garlic powder. Bake for 5-7 minutes until the surface is matte and slightly puffed.
- While the crust par-bakes, brown the turkey sausage in a non-stick skillet over medium heat until fully cooked. Remove sausage from the pan.
- Wipe the skillet and add eggs whisked with skim milk. Scramble until they are just set but still look moist (shiny). Remove from heat immediately to prevent overcooking.
- In a small bowl, combine softened light cream cheese, dried chives, and black pepper. Spread this mixture evenly over the par-baked crust.
- Top the cream cheese layer with the soft-scrambled eggs, turkey sausage, bell peppers, and scallions. Sprinkle the shredded mozzarella over the top.
- Return the pizza to the oven and bake for an additional 10-12 minutes until the cheese is melted and bubbly and the crust is golden brown.
