Instructions:

  1. In a medium bowl or glass mason jars, whisk together the chia seeds, almond milk, maple syrup, vanilla extract, and sea salt.
  2. Stir the mixture vigorously for about 1 minute to ensure seeds are fully submerged and not sticking to the bottom.
  3. Let the mixture sit at room temperature for 5–10 minutes, then whisk again to break up any clumps and ensure a creamy texture.
  4. Cover the container tightly and refrigerate for at least 2 hours, or overnight for the best custard-like consistency.
  5. Before serving, give the pudding a final stir. Adjust thickness with an extra splash of milk if desired.
