Ingredients:

  • 3 medium overripe bananas, mashed (approx. 360g)
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 3/4 cup (150g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 3/4 cup (130g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas until mostly smooth with a few small chunks remaining.
  3. Whisk in the melted butter and brown sugar until combined, then stir in the egg and vanilla extract until the mixture is glossy.
  4. Sift the flour, baking soda, and salt directly into the wet mixture.
  5. Using a rubber spatula, gently fold the flour in using a 'cut and fold' motion until no streaks of dry flour remain; the batter should look slightly lumpy.
  6. Fold in the semi-sweet chocolate chips.
  7. Pour the batter into the prepared pan, smoothing the top with a spatula.
  8. Bake for 50–60 minutes until a toothpick inserted into the center comes out with a few moist crumbs and the top is a deep mahogany brown.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire cooling rack.
