Ingredients:
- 3 medium overripe bananas, mashed (approx. 360g)
- 1/2 cup (115g) unsalted butter, melted and cooled
- 3/4 cup (150g) brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 3/4 cup (130g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mash the bananas until mostly smooth with a few small chunks remaining.
- Whisk in the melted butter and brown sugar until combined, then stir in the egg and vanilla extract until the mixture is glossy.
- Sift the flour, baking soda, and salt directly into the wet mixture.
- Using a rubber spatula, gently fold the flour in using a 'cut and fold' motion until no streaks of dry flour remain; the batter should look slightly lumpy.
- Fold in the semi-sweet chocolate chips.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 50–60 minutes until a toothpick inserted into the center comes out with a few moist crumbs and the top is a deep mahogany brown.
- Let the bread cool in the pan for 10 minutes before transferring to a wire cooling rack.
