Ingredients:

  • 2 cups (225g) grated zucchini, medium grate, lightly pressed
  • 3/4 cup (175ml) vegetable oil
  • 1 cup (200g) granulated sugar
  • 2 large eggs (100g)
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 325°F (163°C). Grease a 9x5-inch loaf pan with non-stick spray and line the bottom and sides with parchment paper.
  2. In a large bowl, whisk together vegetable oil, sugar, eggs, and vanilla extract until the mixture is smooth and pale. Fold in the grated zucchini until evenly distributed.
  3. Sift in all-purpose flour, baking soda, baking powder, salt, and ground cinnamon. Gently fold the dry ingredients into the wet mixture using a spatula, stopping as soon as no streaks of flour remain.
  4. Fold in 3/4 cup of the semi-sweet chocolate chips. Pour the batter into the prepared loaf pan and smooth the top.
  5. Sprinkle the remaining 1/4 cup of chocolate chips over the top of the batter. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
