Ingredients:

  • 1 package (large box) flavoured gelatin (170 g), any flavour
  • 2 envelopes unflavoured gelatin (approx. 14 g)
  • 2 cups (475 ml) rapidly boiling water
  • Neutral cooking spray, as needed

Instructions:

  1. Prep the Pan: Lightly coat the inside of the 9x13 inch pan with cooking spray or a flavourless oil. Wipe off any excess with a paper towel; we only need a very thin film to prevent sticking.
  2. Combine Dry Ingredients: In a large heatproof bowl, combine the contents of the large package of flavoured gelatin and the two envelopes of unflavoured gelatin. Whisk together thoroughly to ensure the powders are evenly mixed. This step prevents clumping later.
  3. Add Boiling Water: Pour the full 2 cups (475 ml) of rapidly boiling water directly into the dry mixture.
  4. Dissolve Completely: Whisk vigorously for 3 to 5 minutes, ensuring that every grain of the gelatin mixture is completely dissolved. Scrape down the sides and bottom of the bowl. The liquid should be perfectly clear, with no granules remaining.
  5. Pour into Pan: Carefully pour the hot liquid mixture into the prepared 9x13 inch pan.
  6. Chill: Transfer the pan to the refrigerator. Chill uncovered for a minimum of 3 hours, but ideally 4 hours, or until the gelatin is perfectly firm and no longer sticky when lightly touched.
  7. Release the Edges: Once fully set, run a thin knife or spatula gently around the perimeter of the pan to loosen the edges of the gelatin sheet.
  8. Prepare Cutters: Fill a small, shallow dish with warm water. This helps prevent the cutters from tearing the gelatin.
  9. Cut the Shapes: Dip a cookie cutter (or knife) into the warm water, shake off the excess, and press firmly down through the gelatin. Dip the cutter in warm water again before each new cut.
  10. Unmold: Use a small offset spatula or thin knife to lift the shaped Jigglers out of the pan and arrange them on a platter.
  11. Serve: Serve immediately, or store in an airtight container in the refrigerator until ready to eat.
