Ingredients:
- 2 cups (180g) Old-fashioned rolled oats
- 1 ½ cups (190g) All-purpose flour
- 1 cup (245g) Unsweetened applesauce
- ½ cup (115g) Unsalted butter, melted and cooled
- ¾ cup (150g) Light brown sugar, packed
- 1 tsp (5g) Baking soda
- 1 tbsp (8g) Ground cinnamon
- ½ tsp (3g) Salt
- 1 cup (150g) Chopped walnuts
- 4 oz (115g) Cream cheese, softened
- 2 tbsp (30g) Unsalted butter, softened
- 1 cup (120g) Powdered sugar
- ½ tsp (2.5ml) Vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, whisk together the flour, old-fashioned rolled oats, baking soda, ground cinnamon, and salt until spices are evenly distributed.
- Stir in the melted and cooled butter, light brown sugar, and unsweetened applesauce using a spatula until just combined.
- Gently fold in the chopped walnuts. Stop mixing as soon as flour streaks disappear.
- Transfer the batter to the prepared pan and use a spatula to press it evenly into the corners.
- Bake on the center rack for 25 minutes, or until edges are mahogany-colored and pulling away from the sides, and the center springs back when touched.
- Remove from oven and allow the bars to cool completely in the pan on a wire rack.
- Optional: Beat softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth. Spread over cooled bars before slicing into 24 squares.
