Ingredients:

  • 1.5 lbs Whole Carrots (Medium), Peeled, trimmed, and cut into uniform 1-inch pieces
  • 1 Tbsp Olive Oil (or Avocado Oil)
  • 1 tsp Kosher Salt
  • 1/2 tsp Freshly Ground Black Pepper
  • 2 Tbsp Unsalted Butter, Melted
  • 2 Tbsp Pure Maple Syrup (Grade A Dark)
  • 1 Tbsp Light Brown Sugar (packed)
  • 1 Tbsp Water or Vegetable Broth
  • 1 Tbsp Fresh Parsley, Finely chopped (Optional Garnish)
  • 1 tsp Sesame Seeds or Toasted Pecans (Optional sprinkle)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  2. Place the prepared carrots into a large mixing bowl. Drizzle with olive oil, salt, and pepper. Toss until evenly coated. Spread the carrots in a single, uncrowded layer on the prepared baking sheet.
  3. Roast for 10 minutes. This allows the carrots to start softening before the glaze is applied, preventing the sugar from burning prematurely.
  4. While the carrots are roasting, combine the melted butter, maple syrup, brown sugar, and water/broth in a small bowl. Whisk until the brown sugar is fully dissolved.
  5. Remove the carrots from the oven. Drizzle the glaze evenly over the warm carrots and toss directly on the sheet using a spatula. Return the glazed carrots to the oven.
  6. Continue roasting for an additional 12 minutes, tossing once halfway through. The carrots are ready when the edges are lightly caramelized, deeply golden brown, and easily pierced with a fork.
  7. Transfer the finished carrots to a serving platter. Garnish immediately with fresh parsley or nuts, if using.
