Ingredients:
- 1.5 lbs Whole Carrots (Medium), Peeled, trimmed, and cut into uniform 1-inch pieces
- 1 Tbsp Olive Oil (or Avocado Oil)
- 1 tsp Kosher Salt
- 1/2 tsp Freshly Ground Black Pepper
- 2 Tbsp Unsalted Butter, Melted
- 2 Tbsp Pure Maple Syrup (Grade A Dark)
- 1 Tbsp Light Brown Sugar (packed)
- 1 Tbsp Water or Vegetable Broth
- 1 Tbsp Fresh Parsley, Finely chopped (Optional Garnish)
- 1 tsp Sesame Seeds or Toasted Pecans (Optional sprinkle)
Instructions:
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
- Place the prepared carrots into a large mixing bowl. Drizzle with olive oil, salt, and pepper. Toss until evenly coated. Spread the carrots in a single, uncrowded layer on the prepared baking sheet.
- Roast for 10 minutes. This allows the carrots to start softening before the glaze is applied, preventing the sugar from burning prematurely.
- While the carrots are roasting, combine the melted butter, maple syrup, brown sugar, and water/broth in a small bowl. Whisk until the brown sugar is fully dissolved.
- Remove the carrots from the oven. Drizzle the glaze evenly over the warm carrots and toss directly on the sheet using a spatula. Return the glazed carrots to the oven.
- Continue roasting for an additional 12 minutes, tossing once halfway through. The carrots are ready when the edges are lightly caramelized, deeply golden brown, and easily pierced with a fork.
- Transfer the finished carrots to a serving platter. Garnish immediately with fresh parsley or nuts, if using.
