Ingredients:
- 6 cups (approx. 2 lbs / 900g) Granny Smith or Honeycrisp apples, peeled and sliced
- 2 tbsp (30ml) lemon juice
- 2 tbsp (42g) honey or maple syrup
- 1 tsp (2g) ground cinnamon
- 1 tbsp (16g) cornstarch or arrowroot powder
- 1 cup (90g) old-fashioned rolled oats
- ½ cup (60g) almond flour
- ¼ cup (60ml) melted coconut oil
- 3 tbsp (42g) maple syrup or honey
- 1 tsp (2g) ground cinnamon
- ¼ tsp (1.5g) sea salt
Instructions:
- Toss the sliced apples with lemon juice, honey, cinnamon, and cornstarch in a large bowl until every slice is evenly coated.
- Transfer the apple mixture into a 9x9 inch baking dish, smoothing the top with a spatula.
- In a medium bowl, combine the rolled oats, almond flour, cinnamon, and salt.
- Pour in the melted coconut oil and maple syrup, stirring until the mixture forms small, clumpy pebbles.
- Scatter the crumble evenly over the apple layer in the baking dish.
- Bake at 350°F (175°C) for 40–45 minutes until the topping is mahogany brown and the apple juices are bubbling.
