Ingredients:
- 4 medium sweet potatoes (approx. 2 lbs / 900g)
- 2 tbsp avocado oil
- 1 tsp flaky sea salt
Instructions:
- Scrub the sweet potatoes thoroughly under cold water and pat them completely dry with paper towels.
- Use a fork to prick each potato 5–6 times to allow internal steam to vent.
- Place the potatoes on a parchment-lined baking sheet. Drizzle avocado oil over each potato and rub in evenly.
- Sprinkle sea salt liberally over the skin of each potato.
- Bake in a preheated oven at 400°F (200°C) for 45 to 60 minutes until the skin is wrinkled and mahogany-colored and the centers are soft.
- Remove from the oven and let rest for 5 minutes. Slice a slit down the center and fluff the interior with a fork.
