Ingredients:

  • 4 tbsp chia seeds
  • 1 cup unsweetened almond milk
  • 1/4 cup plain Greek yogurt
  • 1.5 tsp maple syrup
  • 0.5 tsp pure vanilla extract
  • 1 pinch sea salt

Instructions:

  1. Place 1/4 cup plain Greek yogurt into your jar or bowl and whisk it until smooth. Note: This prevents white lumps in your finished pudding.
  2. Slowly pour 1 cup unsweetened almond milk into the yogurt, whisking constantly until completely combined and smooth.
  3. Add 1.5 tsp maple syrup, 0.5 tsp pure vanilla extract, and a pinch of sea salt.
  4. Add 4 tbsp chia seeds to the liquid. Note: Do this last to prevent them from sticking to the bottom immediately.
  5. Secure the lid and shake vigorously for 30 seconds until seeds are suspended and not clumped.
  6. Let the jar sit on the counter for 10 minutes. Note: This is the most important step for a smooth texture.
  7. After 10 minutes, shake again for 30 seconds until any settled seeds are redistributed.
  8. Place in the fridge for at least 2 hours until the mixture is thick and hold its-shape firm.
