Ingredients:
- 4 tbsp chia seeds
- 1 cup unsweetened almond milk
- 1/4 cup plain Greek yogurt
- 1.5 tsp maple syrup
- 0.5 tsp pure vanilla extract
- 1 pinch sea salt
Instructions:
- Place 1/4 cup plain Greek yogurt into your jar or bowl and whisk it until smooth. Note: This prevents white lumps in your finished pudding.
- Slowly pour 1 cup unsweetened almond milk into the yogurt, whisking constantly until completely combined and smooth.
- Add 1.5 tsp maple syrup, 0.5 tsp pure vanilla extract, and a pinch of sea salt.
- Add 4 tbsp chia seeds to the liquid. Note: Do this last to prevent them from sticking to the bottom immediately.
- Secure the lid and shake vigorously for 30 seconds until seeds are suspended and not clumped.
- Let the jar sit on the counter for 10 minutes. Note: This is the most important step for a smooth texture.
- After 10 minutes, shake again for 30 seconds until any settled seeds are redistributed.
- Place in the fridge for at least 2 hours until the mixture is thick and hold its-shape firm.
