Ingredients:
- 2 large (approx. 340g each) sweet potatoes
- 1 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/2 lb lean ground beef (93% lean)
- 1/4 cup diced white onion
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1/4 cup plain Greek yogurt
- 2 tbsp shredded sharp cheddar cheese
- 2 scallions, thinly sliced
- 1/2 avocado, diced
Instructions:
- Preheat your oven to 400°F (200°C). Scrub the potatoes clean and prick them 5-6 times with a fork to allow steam to escape.
- Rub each potato with olive oil and sea salt. Place them directly on the baking sheet and roast for 45-50 minutes, or until a knife slides into the center with zero resistance.
- While the potatoes roast, heat a skillet over medium-high heat. Add the ground beef and diced onion. Cook until the meat is browned and the onions are translucent.
- Stir in the minced garlic, smoked paprika, salt, and pepper. Sauté for another 2 minutes until the aroma is pungent and the meat has a deep brown sear. Remove from heat.
- Remove the potatoes from the oven. Slice a deep slit down the center of each potato and gently fluff the interior with a fork.
- Spoon a generous portion of the beef mixture into the center. Top with a dollop of Greek yogurt, a sprinkle of cheddar, diced avocado, and sliced scallions.
