Ingredients:

  • 2 large (approx. 340g each) sweet potatoes
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/2 lb lean ground beef (93% lean)
  • 1/4 cup diced white onion
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup plain Greek yogurt
  • 2 tbsp shredded sharp cheddar cheese
  • 2 scallions, thinly sliced
  • 1/2 avocado, diced

Instructions:

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean and prick them 5-6 times with a fork to allow steam to escape.
  2. Rub each potato with olive oil and sea salt. Place them directly on the baking sheet and roast for 45-50 minutes, or until a knife slides into the center with zero resistance.
  3. While the potatoes roast, heat a skillet over medium-high heat. Add the ground beef and diced onion. Cook until the meat is browned and the onions are translucent.
  4. Stir in the minced garlic, smoked paprika, salt, and pepper. Sauté for another 2 minutes until the aroma is pungent and the meat has a deep brown sear. Remove from heat.
  5. Remove the potatoes from the oven. Slice a deep slit down the center of each potato and gently fluff the interior with a fork.
  6. Spoon a generous portion of the beef mixture into the center. Top with a dollop of Greek yogurt, a sprinkle of cheddar, diced avocado, and sliced scallions.
