Instructions:
- Preheat the oven to 425°F (218°C).
- Peel the sweet potatoes and cut them into uniform 1/2-inch (1.3cm) cubes.
- Place the cubes in a large mixing bowl and add the olive oil, salt, pepper, smoked paprika, and garlic powder.
- Toss vigorously until every cube is evenly coated in the oil and spice blend.
- Line a baking sheet with parchment paper and spread the cubes in a single layer, ensuring they are not touching.
- Roast for 25-30 minutes, flipping once halfway through, until edges are mahogany-colored and centers are tender.
