Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed into 1/2-inch pieces

  • 1/2 tsp cracked black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder

Instructions:

  1. Preheat the oven to 425°F (218°C).
  2. Peel the sweet potatoes and cut them into uniform 1/2-inch (1.3cm) cubes.
  3. Place the cubes in a large mixing bowl and add the olive oil, salt, pepper, smoked paprika, and garlic powder.
  4. Toss vigorously until every cube is evenly coated in the oil and spice blend.
  5. Line a baking sheet with parchment paper and spread the cubes in a single layer, ensuring they are not touching.
  6. Roast for 25-30 minutes, flipping once halfway through, until edges are mahogany-colored and centers are tender.
