Ingredients:
- 2 lbs sweet potatoes, peeled and cubed into 1/2-inch pieces
- 2 tbsp extra virgin olive oil
- 1 tbsp pure maple syrup
- 3 cloves garlic, minced
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/4 tsp smoked paprika
Instructions:
- Preheat the oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the cubed sweet potatoes with olive oil, maple syrup, minced garlic, salt, pepper, and paprika until every cube is thinly coated.
- Spread the potatoes in a single layer on the prepared baking sheet, ensuring there is space between the cubes to prevent steaming.
- Roast in the oven for 15 minutes.
- Remove the pan and flip the potatoes using a spatula.
- Roast for an additional 10–15 minutes until the exterior is mahogany-colored and the centers are tender when pierced with a fork.
