Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed into 1/2-inch pieces
  • 2 tbsp extra virgin olive oil
  • 1 tbsp pure maple syrup
  • 3 cloves garlic, minced
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/4 tsp smoked paprika

Instructions:

  1. Preheat the oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the cubed sweet potatoes with olive oil, maple syrup, minced garlic, salt, pepper, and paprika until every cube is thinly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet, ensuring there is space between the cubes to prevent steaming.
  4. Roast in the oven for 15 minutes.
  5. Remove the pan and flip the potatoes using a spatula.
  6. Roast for an additional 10–15 minutes until the exterior is mahogany-colored and the centers are tender when pierced with a fork.
