Ingredients:
- 3 lbs sweet potatoes, peeled and cubed
- 1/2 cup unsalted butter, melted
- 1/2 cup whole milk
- 1/3 cup brown sugar, packed
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 2 cups miniature marshmallows
Instructions:
- Place cubed sweet potatoes in a large pot of salted water. Bring to a boil and simmer for 15-20 minutes until fork-tender.
- Drain potatoes thoroughly and use a hand mixer on medium speed to whip until smooth.
- While mixing, incorporate the melted butter, milk, brown sugar, cinnamon, and salt. Continue whipping until the mixture is airy.
- Spread the sweet potato mixture evenly into a 9x13-inch baking dish.
- Evenly distribute the miniature marshmallows over the surface of the potatoes.
- Bake at 350°F (175°C) for 20-25 minutes.
- Switch to the broiler for 2-3 minutes, watching closely until the marshmallows are puffed and mahogany-colored.
- Let the bake sit for 5 minutes before serving to allow the structure to set.
