Ingredients:

  • 3 lbs sweet potatoes, peeled and cubed
  • 1/2 cup unsalted butter, melted
  • 1/2 cup whole milk
  • 1/3 cup brown sugar, packed
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 cups miniature marshmallows

Instructions:

  1. Place cubed sweet potatoes in a large pot of salted water. Bring to a boil and simmer for 15-20 minutes until fork-tender.
  2. Drain potatoes thoroughly and use a hand mixer on medium speed to whip until smooth.
  3. While mixing, incorporate the melted butter, milk, brown sugar, cinnamon, and salt. Continue whipping until the mixture is airy.
  4. Spread the sweet potato mixture evenly into a 9x13-inch baking dish.
  5. Evenly distribute the miniature marshmallows over the surface of the potatoes.
  6. Bake at 350°F (175°C) for 20-25 minutes.
  7. Switch to the broiler for 2-3 minutes, watching closely until the marshmallows are puffed and mahogany-colored.
  8. Let the bake sit for 5 minutes before serving to allow the structure to set.
