Ingredients:

  • 1 tsp sea salt
  • 1/2 tsp black pepper

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Peel the sweet potatoes and cut them into uniform 1-inch cubes, ensuring they are patted dry to prevent steaming.
  3. In a large mixing bowl, whisk together the olive oil, garam masala, cumin, turmeric, chili powder, salt, and pepper to create a spice paste.
  4. Toss the sweet potato cubes into the spice paste until evenly coated.
  5. Spread the potatoes in a single layer on the baking sheet without overcrowding.
  6. Roast for 15 minutes, flip the cubes with tongs, and roast for an additional 15 minutes until edges are charred and centers are tender.
