Instructions:

- Peel the sweet potatoes and cut them into uniform 1-inch cubes, ensuring they are patted dry to prevent steaming.
- In a large mixing bowl, whisk together the olive oil, garam masala, cumin, turmeric, chili powder, salt, and pepper to create a spice paste.
- Toss the sweet potato cubes into the spice paste until evenly coated.
- Spread the potatoes in a single layer on the baking sheet without overcrowding.
- Roast for 15 minutes, flip the cubes with tongs, and roast for an additional 15 minutes until edges are charred and centers are tender.
