Ingredients:
- 1 lb Leftover Prime Rib (cold, cut into 1-inch thick slices)
- 1 tsp Coarse Sea Salt
- 0.5 tsp Cracked Black Pepper
- 4 cloves Fresh Garlic, smashed
- 3 sprigs Fresh Thyme
- 1 sprig Fresh Rosemary
- 1 tbsp Avocado Oil
- 1 tbsp Unsalted Butter
Instructions:
- Remove the prime rib from the refrigerator 20 minutes before cooking to temper. Use paper towels to pat every surface of the meat bone-dry to ensure a crisp crust.
- Season the cut sides of the beef lightly with coarse sea salt and cracked black pepper.
- Place a heavy cast iron skillet over medium-high heat until wisps of smoke appear. Add the avocado oil.
- Carefully lay the prime rib slices into the pan. Sear for exactly 2 minutes without moving the meat to develop a deep crust.
- Flip the beef, then add the butter, smashed garlic, thyme, and rosemary to the pan. Spoon the foaming herb butter over the meat for the final 2-4 minutes of cooking until warmed through.
