Ingredients:
- 1 ½ oz (45 ml) Malibu Coconut Flavoured Liqueur, chilled
- 2 oz (60 ml) 100% Pineapple Juice, well-chilled
- 2 oz (60 ml) Cranberry Juice Cocktail, chilled
- Ice (enough to fill highball glass)
- 1 Pineapple wedge or slice (optional, for garnish)
- 1 Lime wheel or wedge (optional, for garnish)
Instructions:
- Prepare the Glass: Ensure your Highball or Collins glass is clean and, if possible, chilled. Fill the glass almost completely with fresh, solid ice cubes.
- Pour the Base Spirit: Measure and pour the Malibu coconut liqueur directly over the ice in the glass.
- Add Pineapple Juice: Measure and pour the chilled pineapple juice into the glass.
- Gently Stir (Optional): Give the liquid a very brief, gentle stir with a bar spoon just to combine the rum and pineapple juice. Avoid over-stirring, which melts the ice rapidly.
- Introduce the Cranberry: Slowly pour the chilled cranberry juice over the top of the pineapple and rum mixture. Pouring gently over a piece of ice or the back of a spoon helps the denser cranberry juice ‘float’ slightly, creating the characteristic red/pink sunset effect.
- Garnish and Serve: Secure the lime or pineapple wedge onto the rim of the glass. Serve the Malibu Bay Breeze immediately.
