Ingredients:
- 3 lbs sweet potatoes, peeled and cubed
- 3 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
Instructions:
- Peel the sweet potatoes and slice them into consistent 1-inch (2.5 cm) cubes to ensure even cooking.
- Place cubed sweet potatoes in a large mixing bowl. Drizzle with olive oil and sprinkle with salt, pepper, smoked paprika, and garlic powder. Toss thoroughly until evenly coated.
- Spread the cubes onto a parchment-lined baking sheet in a single layer, ensuring they are not touching to prevent steaming.
- Roast at 400°F (200°C) for 25–30 minutes. Flip the cubes with a spatula halfway through the cooking time.
- Remove from the oven when edges are charred and the centers are velvety when pierced with a fork.
