Ingredients:
- 1 cup granulated white sugar
- 1 cup water
- 1 cup (30g) fresh mint leaves, packed
- 1/2 tsp salt
Instructions:
- Combine the water and sugar in a small saucepan.
- Add the fresh mint leaves to the pot.
- Use a muddler or the back of a wooden spoon to gently bruise the leaves Note: This releases the oils without tearing the leaf.
- Place the pan over medium heat.
- Stir occasionally until the sugar is completely dissolved and the liquid is clear.
- Remove the pan from the heat immediately as soon as the first bubble breaks the surface.
- Cover the pan with a lid.
- Let the mint steep in the hot liquid for 10 to 15 minutes until the syrup turns a bright, translucent green.
- Pour the mixture through a fine mesh strainer into a glass jar, pressing down on the leaves to extract all remaining syrup.
- Allow to cool to room temperature before sealing.
