Ingredients:

  • 1 cup granulated white sugar
  • 1 cup water
  • 1 cup (30g) fresh mint leaves, packed
  • 1/2 tsp salt

Instructions:

  1. Combine the water and sugar in a small saucepan.
  2. Add the fresh mint leaves to the pot.
  3. Use a muddler or the back of a wooden spoon to gently bruise the leaves Note: This releases the oils without tearing the leaf.
  4. Place the pan over medium heat.
  5. Stir occasionally until the sugar is completely dissolved and the liquid is clear.
  6. Remove the pan from the heat immediately as soon as the first bubble breaks the surface.
  7. Cover the pan with a lid.
  8. Let the mint steep in the hot liquid for 10 to 15 minutes until the syrup turns a bright, translucent green.
  9. Pour the mixture through a fine mesh strainer into a glass jar, pressing down on the leaves to extract all remaining syrup.
  10. Allow to cool to room temperature before sealing.
