Ingredients:

  • 3 cups (450g) Granny Smith apples, peeled and sliced
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) ground cinnamon
  • 1/2 cup (115g) vegetable oil
  • 3 large eggs
  • 1 cup (200g) granulated sugar
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1/2 cup (65g) all-purpose flour
  • 1/2 cup (100g) brown sugar, packed
  • 4 tbsp (57g) cold unsalted butter, cubed
  • 1/2 tsp (1g) ground cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan and line with parchment paper.
  2. Toss sliced apples with lemon juice and 1 tsp cinnamon in a medium bowl and set aside.
  3. In a large bowl, beat vegetable oil and eggs using an electric mixer on medium-high until creamy and pale.
  4. Gradually add granulated sugar and vanilla extract, beating for another 2 minutes until the batter is fluffy.
  5. Sift all-purpose flour (250g), baking powder, and salt into the wet mixture; mix on low speed just until combined.
  6. Prepare the streusel by combining 65g flour, brown sugar, and 1/2 tsp cinnamon, then rub in the cold cubed butter until small clumps form.
  7. Spread the batter into the prepared pan, arrange the apple slices on top, and sprinkle evenly with the streusel topping.
  8. Bake for 45 minutes or until a toothpick comes out clean. Cool on a wire rack before slicing.
