Ingredients:
- 3 cups (450g) Granny Smith apples, peeled and sliced
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) ground cinnamon
- 1/2 cup (115g) vegetable oil
- 3 large eggs
- 1 cup (200g) granulated sugar
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (65g) all-purpose flour
- 1/2 cup (100g) brown sugar, packed
- 4 tbsp (57g) cold unsalted butter, cubed
- 1/2 tsp (1g) ground cinnamon
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan and line with parchment paper.
- Toss sliced apples with lemon juice and 1 tsp cinnamon in a medium bowl and set aside.
- In a large bowl, beat vegetable oil and eggs using an electric mixer on medium-high until creamy and pale.
- Gradually add granulated sugar and vanilla extract, beating for another 2 minutes until the batter is fluffy.
- Sift all-purpose flour (250g), baking powder, and salt into the wet mixture; mix on low speed just until combined.
- Prepare the streusel by combining 65g flour, brown sugar, and 1/2 tsp cinnamon, then rub in the cold cubed butter until small clumps form.
- Spread the batter into the prepared pan, arrange the apple slices on top, and sprinkle evenly with the streusel topping.
- Bake for 45 minutes or until a toothpick comes out clean. Cool on a wire rack before slicing.
