Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 2 tbsp (14g) ground cinnamon
- 1 tsp (3g) ground ginger
- 1/2 tsp (2g) ground cloves
- 1 cup (235g) canned pumpkin puree
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) coconut sugar
- 2 large (100g) eggs
- 1/2 cup (120g) sour cream
- 1 tsp (5ml) pure vanilla extract
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) pure maple syrup
- 1 tbsp (15ml) milk
- 1/4 tsp (1g) ground cinnamon
Instructions:
- Preheat oven to 350°F (175°C). Grease a 12-cup Bundt pan with butter or non-stick spray and dust with flour, tapping out the excess.
- In a large bowl, cream together the softened butter and coconut sugar until pale and fluffy.
- Beat in eggs one at a time, then stir in the pumpkin puree, sour cream, and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, salt, ground cinnamon, ginger, and cloves.
- Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
- Pour batter into the prepared pan and bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake rest in the pan for 10 minutes before inverting onto a wire rack to cool completely.
- Whisk together powdered sugar, maple syrup, milk, and cinnamon to create the glaze, then drizzle over the cooled cake.
