Ingredients:

  • 1.5 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 cup packed brown sugar
  • 0.33 cup neutral oil
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 2 cups shredded zucchini
  • 0.5 cup chopped walnuts

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
  2. Whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon in a mixing bowl until no clumps remain.
  3. In a separate bowl, beat the egg and brown sugar until pale and frothy. Whisk in the neutral oil and vanilla extract until smooth.
  4. Gently fold the shredded zucchini into the wet mixture.
  5. Slowly stir in the dry ingredients using a spatula, stopping immediately once flour streaks disappear to avoid over-mixing.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
