Ingredients:
- 1.5 cups all-purpose flour

- 1 tsp ground cinnamon
- 0.5 cup packed brown sugar
- 0.33 cup neutral oil
- 1 large egg
- 1 tsp pure vanilla extract
- 2 cups shredded zucchini
- 0.5 cup chopped walnuts
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
- Whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon in a mixing bowl until no clumps remain.
- In a separate bowl, beat the egg and brown sugar until pale and frothy. Whisk in the neutral oil and vanilla extract until smooth.
- Gently fold the shredded zucchini into the wet mixture.
- Slowly stir in the dry ingredients using a spatula, stopping immediately once flour streaks disappear to avoid over-mixing.
- Fold in the chopped walnuts.
- Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
