Ingredients:
- 2 medium ripe bananas, mashed (approx. 170g)
- 1 cup (120g) grated zucchini, squeezed slightly
- 1/2 cup (115g) melted unsalted butter
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 3/4 cup (150g) brown sugar, packed
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/2 cup (60g) chopped walnuts
- 1/2 cup (85g) semi-sweet chocolate chips
Instructions:
- Grate the zucchini using the small holes of a box grater. Place the shreds in a paper towel and give them a light squeeze to remove excess water.
- Mash the bananas in a separate bowl until smooth.
- In a large mixing bowl, stir together the melted butter, mashed bananas, eggs, and vanilla until the mixture is a uniform, pale yellow color.
- Fold in the grated zucchini until evenly distributed.
- Sift the flour, brown sugar, baking soda, salt, and cinnamon directly into the wet mixture.
- Using a spatula, gently fold the ingredients together. Stop the moment you no longer see streaks of white flour to avoid overmixing.
- Fold in the chopped walnuts and chocolate chips.
- Pour the batter into a prepared 9x5 inch loaf pan.
- Bake at 350°F (175°C) for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
