Ingredients:

  • 2 medium ripe bananas, mashed (approx. 170g)
  • 1 cup (120g) grated zucchini, squeezed slightly
  • 1/2 cup (115g) melted unsalted butter
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 3/4 cup (150g) brown sugar, packed
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1/2 cup (60g) chopped walnuts
  • 1/2 cup (85g) semi-sweet chocolate chips

Instructions:

  1. Grate the zucchini using the small holes of a box grater. Place the shreds in a paper towel and give them a light squeeze to remove excess water.
  2. Mash the bananas in a separate bowl until smooth.
  3. In a large mixing bowl, stir together the melted butter, mashed bananas, eggs, and vanilla until the mixture is a uniform, pale yellow color.
  4. Fold in the grated zucchini until evenly distributed.
  5. Sift the flour, brown sugar, baking soda, salt, and cinnamon directly into the wet mixture.
  6. Using a spatula, gently fold the ingredients together. Stop the moment you no longer see streaks of white flour to avoid overmixing.
  7. Fold in the chopped walnuts and chocolate chips.
  8. Pour the batter into a prepared 9x5 inch loaf pan.
  9. Bake at 350°F (175°C) for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
