Ingredients:

  • 1/2 cup (125g) creamy peanut butter
  • 1/3 cup (110g) honey
  • 1 tsp (5ml) vanilla extract
  • 1 cup (90g) rolled oats
  • 1/4 cup (30g) flax seeds
  • 1/4 cup (40g) dark chocolate chips
  • 1 pinch (1g) sea salt

Instructions:

  1. Combine the peanut butter, honey, and vanilla extract in a medium bowl. Stir vigorously until the mixture is smooth and glossy.
  2. Pour in the rolled oats, flax seeds, and sea salt. Fold the mixture using a spatula until all oats are completely coated in the peanut butter base.
  3. Gently fold in the dark chocolate chips, being careful not to over mix or crush the chips.
  4. Scoop roughly 1 tablespoon of dough using a small cookie scoop for consistency.
  5. Roll the dough between your palms until it forms a smooth sphere. Lightly grease hands with oil if the dough sticks.
  6. Line a baking sheet with parchment paper and place the balls on the sheet, leaving a small gap between them.
  7. Place the tray in the refrigerator. Chill for at least 30 minutes until the balls feel firm to the touch.
  8. Remove from the fridge and serve immediately or move to a storage container.
