Ingredients:
- 1.5 cups raw pecans
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract
- 0.25 tsp sea salt
- 0.25 tsp ground cinnamon
- 0.5 cup dark chocolate chips
- 1 tsp coconut oil
Instructions:
- Place the pecans in the food processor and pulse until they reach a coarse, sandy texture.
- Add the maple syrup, vanilla, salt, and cinnamon. Blend on high until the mixture clumps together into a sticky, mahogany-colored dough.
- Scoop approximately 1 tablespoon of the mixture and roll it between your palms until it forms a smooth, uniform ball.
- Place each ball on a parchment-lined baking sheet and chill in the freezer for 15–20 minutes until firm.
- Melt the dark chocolate and coconut oil in 30-second intervals in the microwave, stirring in between until glossy.
- Using a fork, dip each chilled pecan ball into the chocolate, lifting and shaking off the excess.
- Return to the parchment paper and chill for another 10 minutes until the shell is set.
