Ingredients:

  • 1.5 cups raw pecans
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 0.25 tsp sea salt
  • 0.25 tsp ground cinnamon
  • 0.5 cup dark chocolate chips
  • 1 tsp coconut oil

Instructions:

  1. Place the pecans in the food processor and pulse until they reach a coarse, sandy texture.
  2. Add the maple syrup, vanilla, salt, and cinnamon. Blend on high until the mixture clumps together into a sticky, mahogany-colored dough.
  3. Scoop approximately 1 tablespoon of the mixture and roll it between your palms until it forms a smooth, uniform ball.
  4. Place each ball on a parchment-lined baking sheet and chill in the freezer for 15–20 minutes until firm.
  5. Melt the dark chocolate and coconut oil in 30-second intervals in the microwave, stirring in between until glossy.
  6. Using a fork, dip each chilled pecan ball into the chocolate, lifting and shaking off the excess.
  7. Return to the parchment paper and chill for another 10 minutes until the shell is set.
