Ingredients:
- 1.5 cups (150g) graham cracker crumbs
- 6 tbsp (85g) unsalted butter, melted
- 1 cup (250g) pumpkin puree
- 1 cup (240ml) whole milk, chilled
- 1 package (96g) instant vanilla pudding mix
- 1 tsp (2g) pumpkin pie spice
- 1 tsp (5ml) vanilla extract
- 0.5 cup (120ml) heavy whipping cream, cold
- 2 tbsp (25g) powdered sugar
Instructions:
- Combine graham cracker crumbs and melted butter in a medium bowl; stir until the crumbs are evenly coated.
- Spoon 2 tablespoons of the crumb mixture into the bottom of each of the 6 dessert cups.
- Press the crumbs down firmly using the back of a spoon or a small flat-bottomed glass until compacted.
- Place the cups in the refrigerator to set while preparing the filling.
- In a large bowl, combine the chilled milk, instant pudding mix, pumpkin puree, pumpkin pie spice, and vanilla extract.
- Beat the mixture with a handheld mixer on medium-high speed for 2-3 minutes until smooth and thickened to soft peaks.
- Spoon the pumpkin mousse evenly over the chilled graham cracker crusts.
- In a separate bowl, whip the cold heavy whipping cream and powdered sugar until stiff peaks form.
- Top each cup with a dollop of whipped cream.
- Refrigerate the completed cups for 4 hours before serving.
