Ingredients:
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (125g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1/4 tsp (1.5g) salt
- 1 1/2 cups (190g) pecan halves
- 1/2 cup (113g) unsalted butter, melted
- 3/4 cup (150g) packed light brown sugar
- 1/2 cup (120ml) corn syrup
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) salt
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, stir together the melted butter, flour, sugar, and salt until a soft dough forms.
- Press the dough mixture firmly and evenly into the bottom of the prepared baking pan using a spatula.
- Par-bake the crust for 10–12 minutes until the edges are pale gold, then remove from the oven.
- In a separate bowl, whisk together the melted butter and brown sugar until smooth.
- Add the eggs, corn syrup, vanilla, and salt; whisk vigorously until the mixture is glossy and combined.
- Gently fold in the pecan halves until evenly coated.
- Pour the pecan filling over the hot par-baked crust, spreading it to the edges.
- Bake for 20–25 minutes until the filling is bubbling and the pecans are a deep mahogany brown.
- Allow the bars to cool completely in the pan for at least 30 minutes before slicing to ensure the custard is set.
