Ingredients:

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (125g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1/4 tsp (1.5g) salt
  • 1 1/2 cups (190g) pecan halves
  • 1/2 cup (113g) unsalted butter, melted
  • 3/4 cup (150g) packed light brown sugar
  • 1/2 cup (120ml) corn syrup
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) salt

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, stir together the melted butter, flour, sugar, and salt until a soft dough forms.
  3. Press the dough mixture firmly and evenly into the bottom of the prepared baking pan using a spatula.
  4. Par-bake the crust for 10–12 minutes until the edges are pale gold, then remove from the oven.
  5. In a separate bowl, whisk together the melted butter and brown sugar until smooth.
  6. Add the eggs, corn syrup, vanilla, and salt; whisk vigorously until the mixture is glossy and combined.
  7. Gently fold in the pecan halves until evenly coated.
  8. Pour the pecan filling over the hot par-baked crust, spreading it to the edges.
  9. Bake for 20–25 minutes until the filling is bubbling and the pecans are a deep mahogany brown.
  10. Allow the bars to cool completely in the pan for at least 30 minutes before slicing to ensure the custard is set.
