Ingredients:

  • 2 medium zucchini (approx. 1.5 lbs / 680g), sliced into 1/4 inch rounds
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 3 cloves garlic, thinly sliced
  • 1 tbsp fresh lemon juice
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tbsp chopped fresh parsley

Instructions:

  1. Cut the zucchini into uniform 1/4 inch rounds and pat the slices dry with a paper towel to remove surface moisture.
  2. Heat olive oil in a 12-inch cast iron or stainless steel skillet over medium-high heat until it shimmers and begins to wisp smoke.
  3. Arrange the zucchini in a single layer, leaving small gaps between each slice. Press down lightly and sear undisturbed for 3-4 minutes until a deep mahogany crust forms. Flip and repeat for another 3 minutes.
  4. Reduce heat to medium. Add the sliced garlic and sauté for 60 seconds until fragrant and golden.
  5. Remove from heat immediately. Stir in the lemon juice, salt, pepper, and parsley. Sprinkle with Parmesan cheese just before serving.
