Ingredients:
- 2 medium zucchini (approx. 1.5 lbs / 680g), sliced into 1/4 inch rounds
- 3 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 3 cloves garlic, thinly sliced
- 1 tbsp fresh lemon juice
- 1/4 cup freshly grated Parmesan cheese
- 1 tbsp chopped fresh parsley
Instructions:
- Cut the zucchini into uniform 1/4 inch rounds and pat the slices dry with a paper towel to remove surface moisture.
- Heat olive oil in a 12-inch cast iron or stainless steel skillet over medium-high heat until it shimmers and begins to wisp smoke.
- Arrange the zucchini in a single layer, leaving small gaps between each slice. Press down lightly and sear undisturbed for 3-4 minutes until a deep mahogany crust forms. Flip and repeat for another 3 minutes.
- Reduce heat to medium. Add the sliced garlic and sauté for 60 seconds until fragrant and golden.
- Remove from heat immediately. Stir in the lemon juice, salt, pepper, and parsley. Sprinkle with Parmesan cheese just before serving.
