Ingredients:
- 3 ripe bananas, mashed
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp pumpkin pie spice
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mash the bananas until mostly smooth, then whisk in the pumpkin puree, vegetable oil, brown sugar, eggs, and vanilla extract until the mixture is uniform and glossy.
- Sift the flour, baking soda, salt, and pumpkin pie spice directly into the wet ingredients. Gently fold the mixture together with a spatula until no streaks of flour remain.
- Fold in the semi-sweet chocolate chips and chopped walnuts.
- Pour the batter into the prepared pan and bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
