Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/4 cup (50g) granulated sugar
- 1 1/4 cups (155g) all-purpose flour
- 1/4 tsp (1.5g) salt
- 15 oz (425g) canned pumpkin puree
- 3 large eggs
- 3/4 cup (150g) brown sugar, packed
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (2g) ground ginger
- 1/4 tsp (1g) ground cloves
- 1/2 tsp (3g) salt
- 12 oz (355ml) evaporated milk
Instructions:
- In a medium bowl, beat the softened butter and sugar until creamy.
- Stir in the flour and salt until the mixture looks like coarse crumbs.
- Press the dough evenly into the bottom of a parchment-lined 9x9 inch baking pan.
- Bake at 350°F (175°C) for 15-18 minutes until the edges are just barely golden.
- In a large bowl, whisk the pumpkin puree and brown sugar until smooth.
- Add eggs one at a time, whisking thoroughly after each addition.
- Stir in the cinnamon, ginger, cloves, and salt.
- Slowly whisk in the evaporated milk until the batter is glossy and uniform.
- Carefully pour the pumpkin mixture over the pre-baked crust.
- Bake for 35-40 minutes, removing when the edges are set but the center still has a slight, jelly-like wobble.
- Let the bars cool completely in the pan on a wire rack for 1 hour, then refrigerate for at least 2 hours.
