Ingredients:
- 15 oz (425g) pumpkin puree
- 3 large (150g) eggs
- 3/4 cup (150g) brown sugar, packed
- 1 tbsp (15ml) cornstarch
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (2g) ground ginger
- 1/4 tsp (1g) ground cloves
- 1/4 tsp (1g) ground nutmeg
- 1/2 tsp (3g) salt
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) bourbon
- 1 cup (120g) all-purpose flour
- 1 cup (90g) rolled oats
- 3/4 cup (150g) brown sugar, packed
- 1/2 tsp (3g) salt
- 1/2 cup (113g) unsalted butter, cold and cubed
- 1/2 cup (60g) chopped pecans
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan or line it with parchment paper.
- In a large bowl, whisk together the pumpkin puree, brown sugar, cornstarch, cinnamon, ginger, cloves, nutmeg, and salt until smooth.
- Add the eggs one at a time, whisking until fully incorporated, then stir in the vanilla extract and bourbon. Pour the mixture into the prepared pan.
- In a medium bowl, combine the flour, rolled oats, brown sugar, and salt.
- Add the cold, cubed butter. Use a pastry cutter or forks to work the butter into the dry ingredients until the mixture resembles coarse crumbs with pea-sized chunks of butter remaining.
- Fold in the chopped pecans.
- Evenly sprinkle the crumble mixture over the pumpkin filling, pressing down very lightly.
- Bake for 40–45 minutes until the edges are slightly puffed and the topping is a deep mahogany-brown.
