Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1/4 tsp (1.5g) salt
- 1 can (15 oz / 425g) pumpkin puree
- 2 large eggs
- 1/2 cup (100g) light brown sugar, packed
- 1 tbsp (12g) pumpkin pie spice
- 1 tsp (5ml) vanilla extract
- 1/4 cup (60ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving an inch of overhang on the sides.
- Combine melted butter, flour, sugar, and salt in a bowl until a sandy dough forms.
- Press the dough mixture firmly and evenly into the bottom of the prepared pan.
- Bake the crust for 10–12 minutes until the edges just begin to turn golden brown.
- In a large bowl, whisk pumpkin puree and brown sugar until smooth.
- Beat in eggs one at a time, then stir in pumpkin pie spice, vanilla extract, and heavy cream until the batter is uniform and lump-free.
- Pour the pumpkin filling over the pre-baked hot crust and spread to the edges with a spatula.
- Bake for 20–25 minutes until the edges are set and the center has a slight jiggle but is not liquid.
- Remove from oven, cool completely in the pan, and refrigerate for at least 60 minutes before slicing.
