Ingredients:
- 1 cup (90g) rolled oats
- 1/2 cup (65g) raw, unsalted pumpkin seeds
- 1/4 cup (30g) pumpkin seed flour
- 1/2 tsp (2g) ground cinnamon
- 1/4 tsp (1g) baking soda
- 1/4 tsp (1.5g) sea salt
- 1/3 cup (80ml) pure maple syrup
- 3 tbsp (45ml) melted coconut oil
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- In a large bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until the mixture is glossy and fully emulsified.
- Add the rolled oats, whole pumpkin seeds, pumpkin seed flour, cinnamon, baking soda, and salt to the wet mixture.
- Stir with a spatula until no dry pockets of flour remain and the dough is sticky and dense.
- Use a cookie scoop to drop 12 even mounds of dough onto the prepared baking sheet.
- Gently press the top of each mound with your palm to flatten them slightly.
- Bake for 10–12 minutes until the edges turn a deep golden brown.
- Allow the cookies to cool on the pan for 5 minutes to set before transferring them to a wire rack.
