Ingredients:
- 1.5 cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 2 tbsp brown sugar
- 0.25 tsp salt
- 1 cup pumpkin puree
- 0.5 cup dark brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1.5 tsp pumpkin pie spice
- 0.5 cup all-purpose flour
- 0.5 tsp baking powder
- 1 cup bittersweet chocolate chunks
- 2 cups mini marshmallows
- Flaky sea salt
Instructions:
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, brown sugar, and salt. Press firmly into the bottom of a parchment-lined 9x9 inch baking pan and bake for 8 minutes.
- In a medium bowl, cream together pumpkin puree and dark brown sugar until smooth. Beat in the egg and vanilla extract.
- Fold in the pumpkin pie spice, flour, and baking powder until just combined.
- Spread the pumpkin batter evenly over the pre-baked crust. Press bittersweet chocolate chunks deep into the pumpkin layer.
- Top with a layer of mini marshmallows and bake for 15-18 minutes until marshmallows are golden-brown. Remove and sprinkle with flaky sea salt.
