Ingredients:

  • 1.5 cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp brown sugar
  • 0.25 tsp salt
  • 1 cup pumpkin puree
  • 0.5 cup dark brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.5 tsp pumpkin pie spice
  • 0.5 cup all-purpose flour
  • 0.5 tsp baking powder
  • 1 cup bittersweet chocolate chunks
  • 2 cups mini marshmallows
  • Flaky sea salt

Instructions:

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, brown sugar, and salt. Press firmly into the bottom of a parchment-lined 9x9 inch baking pan and bake for 8 minutes.
  2. In a medium bowl, cream together pumpkin puree and dark brown sugar until smooth. Beat in the egg and vanilla extract.
  3. Fold in the pumpkin pie spice, flour, and baking powder until just combined.
  4. Spread the pumpkin batter evenly over the pre-baked crust. Press bittersweet chocolate chunks deep into the pumpkin layer.
  5. Top with a layer of mini marshmallows and bake for 15-18 minutes until marshmallows are golden-brown. Remove and sprinkle with flaky sea salt.
