Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 2 tsp (10g) pumpkin pie spice
- 1/2 cup (115g) unsalted butter, melted and cooled
- 3/4 cup (150g) brown sugar, packed
- 1 large egg (50g), room temperature
- 1 cup (245g) pumpkin puree
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) cream cheese, softened to room temperature
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1 tsp (5g) ground cinnamon
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
- In a medium bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
- In a separate large bowl, whisk the melted butter and brown sugar until combined.
- Add the egg, pumpkin puree, and vanilla extract to the butter mixture, beating until the mixture is smooth and mahogany-colored.
- Gently fold in the dry ingredients using a spatula, stopping as soon as flour streaks disappear to ensure tender cakes.
- Using a cookie scoop, drop rounded mounds of batter onto prepared sheets, spacing them 2 inches apart.
- Bake for 10–12 minutes until edges are set and tops spring back when lightly touched.
- Immediately transfer cakes to a wire rack and allow to cool completely before filling.
- Beat the softened cream cheese and butter together until the mixture is pale and fluffy.
- Gradually add the powdered sugar, ground cinnamon, vanilla extract, and heavy cream, beating until smooth and stable.
- Pipe or spread the cinnamon cream cheese filling onto the flat side of one cooled cake and sandwich it with another cake.
